How We Source Our Coffee

At Darkseason Coffee, every coffee begins with the cup.

Before we know the farm, the process, or even the price, we taste the coffee completely blind. We sit down with a selection of green coffee samples often from the same region or country and judge them purely on what matters most: flavour, balance, sweetness, and character.

Blind cupping keeps things honest. It allows us to focus entirely on the quality in the cup, without influence from reputation or cost. Every coffee we source must be distinctive, consistent, and clean, with the depth and smoothness we believe great coffee should have.

We work closely with trusted importers who source coffee ethically and responsibly, paying well above commodity market prices to support quality-focused producers and sustainable farming practices.

Some coffees are selected for our blends, where balance and body are key. Others stand confidently on their own as single origins, showcasing the unique character of their farm and region.

Finding the Perfect Roast

Once we’ve selected a coffee, the real work begins.

Every coffee behaves differently in the roaster, which is why we spend time developing a roast profile tailored specifically to that bean. Through sample roasting and careful testing, we explore how temperature, timing, and airflow shape the final cup.

Roasting is both technical and creative. Small changes in heat or development time can completely transform flavour, body, sweetness, and acidity. We pay close attention to the roast curve and rate of rise throughout the process to bring out the best possible expression of each coffee.

Our goal is simple: create coffees that are rich, balanced, smooth, and memorable.

Consistency in Every Roast

Once we’ve created a roast profile we love, we refine it until it can be reproduced consistently batch after batch.

Consistency matters. Hitting critical temperatures and timings throughout the roast ensures every bag delivers the same experience we intended—from the first cup to the last.

From Roastery to Cup

After roasting, we taste and cup our coffees regularly to maintain quality and consistency. We then develop tasting notes, packaging, and brewing recommendations designed to help each coffee shine.

We believe we have a responsibility to honour the work of the farmers who grow our coffee. That means roasting carefully, brewing properly, and treating every coffee with respect from origin to cup.

From the first green coffee samples arriving at the roastery to the final sealing of each bag, every step takes time, care, and attention to detail.
